Ingredients
- 2 cloves of garlic, peeled and chopped
- 1 onion, peeled and chopped
- 4 rashers streaky bacon, finely chopped
- 2 carrots, trimmed and finely chopped
- 2 celery sticks, finely chopped
- 2 sprigs of fresh rosemary or oregano leaves or half a tsp dried
- 1 Tbsp olive oil
- 500g minced beef
- 1/2 cup red wine
- 1/2 cup beef stock
- 2 Tbsp tomato paste
- 2 x 400g tins of tomatoes
- 500g dried spaghetti
- Parmesan cheese
- salt and pepper
Method
- Fry the bacon in a pan with olive oil over a medium heat for 10 minutes or until crispy. Add the onion, celery and carrot and cook for a further 10 minutes, or until softened, stirring occasionally. Then add the garlic and herbs and fry for a further minute.
- Add the mince and cook until starting to brown, then pour in the wine and stock. Leave to bubble until the alcohol smell is gone.
- Add the tomato paste, tinned tomatoes and simmer until the sauce thickens, stirring occasionally. Season to taste with salt and pepper.
- While the Bolognese is simmering, cook the spaghetti in boiling salted water according to the packet instructions.
- Once the spaghetti is cooked, drain and divide the spaghetti between plates or bowls, add a spoonful of Bolognese to each, then serve with a generous grating of Parmesan.
